Help every step of the way
The first important decision you have to make when planning a large-scale corporate event, be it an awards night, gala ball or end of year dinner is getting an extremely experienced and helpful catering and events team to support you. Your events manager should help you at every step of the event planning process. They should be there to offer advice, source suppliers, work with you to establish the perfect style of menu, advise on successful menu combinations, discuss dietary requirements and much more.
It may just be an estimate at the beginning, but get a head count ready to provide the caterer or event planner that allows them to get started on menu options. Give continuous updates as your corporate event draws near.
The perfect package
Once head office has given you a budget you can work with it’s time to choose your package; bronze, silver or gold? Do you want pre-dinner canapés, tea and coffee afterwards and what kind of drinks package? You should be able to select wines, beers, ciders or liquors to suit the occasion. We all have different tastes and choosing the perfect menu isn’t easy, but your caterer should give you a wide variety to choose from and help you select the most appropriate dishes.
This is an example of a menu from a recent large corporate awards function Griffin Catering & Events catered for. The menu style was an alternative drop off entree and main with a set dessert:
Blackened Mount Barker chicken, chipotle, pica de Gallo, turtle bean salad, avocado, corn tortilla (gf)

Remember dietary requirements
An experienced Chef will have a variety of alternative dishes on hand if extra dishes are required for guests with dietary requirements. However, try and establish all guests who need vegetarian, gluten-free, vegan or allergy free dishes before the event so that the Chef can prepare.
Plan the room setup
You have a large number of guests that need to fit into a venue space and you need to think about the functionality of the table setup. There are a lot of options for table arrangements, decide between round tables or long tables and discuss certain configurations with your events manager.
Do you need a stage with projector and a microphone for speeches? Have you thought about the lighting, what affects you want and do you expect guests will want to hit the dance floor after their meal? Even better still, it’s always impressive to have a separate lounge area with modern furniture.
